Green tea is produced from the leaves and buds of Camellia sinensis, a flowering shrub from the Theaceae family native to China and East Asia. The defining characteristic of green tea is its minimal oxidation during processing — after harvest, the leaves are promptly heated (either pan-fired in the Chinese style or steamed in the Japanese style) to halt oxidation, preserving the leaf's green color and fresh, vegetal character.
